Ingredients

3 cups Coconut Shredded

1/4 teaspoon Salt

2 teaspoons Vanilla

3/4 cup Sugar


Directions

Cover 2 cookie sheets with parchment. Stir ingredients together in a metal bowl. Place bowl over skillet w simmering water. ( or put mixture in double boiler). Cook , stirring constantly, for about 5 minutes or until egg turns from translucent to opaque. Let stand for 30 mins. Preheat oven to 350. Drop mixture on sheets and then place on a medium high rack in oven. Cook for 5 mins until lightly browned . Drop oven to 325 or 300 and bake for 1o-15 mins until cookies turn golden. .
