Kale Chicken Soup

Ingredients

2 cups Kale

2 cloves GARLIC

10 OZ Red pepper

30 gram Feta cheese

6 OZ Chicken breast

.5 tablespoon OLIVE OIL

1/2 teaspoon Oregano

1/2 teaspoon TUMERIC

5 tablespoon Lemon


Directions

- In a 4 qt Dutch Oven heat 1 tbsp of the oil over medium-high heat. - Add 2 oz onions and garlic (Onion is not on the ingredient list because it was providing wrong nutritional value) - Cook and stir 2 to 4 minutes or until tender - Stir in broth and Potatoes - Bring to boiling - Reduce heat, Cover and Cook 10 to 15 minutes or until potatoes are tender -Stir in Shredded chicken breast (already cooked) kale and Oregano - Cover, Cook 2 or 3 minutes until kale is wilted - Remove from heat and Stir lemon and remaining oil - let stand for 10 minutes - Season to taste with Salt and Pepper - Top with cheese and additional lemon zest if desired
