Kedgeree

An Indian-style breakfast dish. This also contains rice (and plenty of it) and it's easy to make. You can swap out a little bit of olive oil for the butter, if you prefer.

Ingredients

1/2 lb Smoked fish flaked

2 cups Brown rice cooked

4 oz Smoked ham julienned

1/2 cup Flat leaf parsley chopped

1/4 cup Unsalted butter melted

1/4 cup plain Soy milk or cream

fp Cayenne powder

3 Hard-Boiled eggs sliced or grated

Parsley for garnish


Directions

Preheat oven to 350 F Oil a 2-quart baking dish In a large bowl, combine all remainig ingredients except eggs. Transfer to baking dish. Arrange eggs on top. Cover tightly with lid or foil. Bake until hit, about 20 mins. Garnish before serving.
