Lavender Shortbread

Ingredients

1/3 cup sugar

1/2 teaspoon dried lavender buds

1 teaspoon lemon zest

2 and 1/4 cups flour

2 tablespoons cornstarch

1/2 teaspoon salt

3 tablespoons lavender honey

3/4 cup cold butter sliced into small pieces


Directions

Preheat oven to 300 degrees. Line a 9-inch springform pan with parchment or wax paper. In a food processor, combine the sugar, lavender and lemon zest until buds are chopped. In bowl of mixer, place sugar mixture and remaining ingredients. Mix on low with the paddle until combined and crumbly. Pat into prepared pan. Prick with fork. Bake 30 to 40 minutes until golden. Cool for 5 minutes. Remove sides of pan. Score into 16 pieces. Allowed to cool completely. Sprinkle with powdered sugar and serve.
