Ingredients

1 cup Sugar

6 tablespoons Butter

2 Eggs

1/4 cup milk

1 1/2 cups Flour

1 1/2 teaspoons Baking Powder

1/4 teaspoon Salt

1 teaspoon lemon peel grated, divided

1/2 cup Sugar

2 tablespoons lemon juice freshly squeezed

Directions

Preheat oven to 350 F. Grease a 9 x 5 x 3 inch loaf pan. Cream 1 cup sugar and butter together until fluffy. Add the eggs, one at a time. Beat well after each addition. Add the milk. Set aside. Sift the flour, baking powder, and salt together. Stir in 1/2 tsp of the lemon peel. Stir by hand into the reserved creamed mixture until the flour is just moistened. Turn the batter in the prepared loaf pan. Bake for 50-60 minutes. Mix the 1/2 cup sugar, lemon juice, and remaining lemon peel together. When the bread is done, pour the lemon juice mixture over the hot bread. Cool in the pan for 10 minutes. Remove from the pan and cool on a wire rack.
