Lentil Soup with Kielbasa

Ingredients

1/2 pound Green Lentils

2 tablespoons Olive oil

2 each onions diced

2 cups leeks chopped - white and light green

2 cloves garlic minced

2 teaspoons kosher salt

1 teaspoon pepper

2 teaspoons dried thyme

1 teaspoon cummin seed ground

3 stalks celery diced

3 each carrot diced

6 cups chicken broth

2 tablespoons tomato paste

1 each Keilbasa ring Thickly sliced

2 tablespoons red wine


Directions

Rinse lentil then cover with boiling water for 15 minutes. Heat a large dutch oven over medium heat, add olive oil, heat - then add onion, leeks, garlic, salt, pepper, thyme and cumin, sauté 20 minutes, or until he vegetable are tender. Add the chicken broth, tomato paste and drained lentils. Cover and bring to a boil, reduce heat uncover an simmer for 1 hour or until lentils are cooked through and tender. Add the keilbasa and red wine, simmer until kielbasa is hot.
