Lynn's Stuffed Portabella Caps

Ingredients

4 Portabella Mushroom caps large

2 chicken breasts cooked in balsamic vinaigrette and shredded

black olives sliced

1 tablespoon onion graded

Parmesan cheese

Feta cheese

tomato sliced

Fresh mozzarella cheese


Directions

Cut raw chicken breasts into 1 inch pieces and toss with balsamic dressing. Cook at 350 degrees for 30 minutes. After cooled shred chicken. Mix chicken w/dressing, black olives, onions, parmesan, and feta cheese. Stuff into caps. Spray caps with Pam. Slice tomato. Top with mozzarella. Bake in 350 degree oven for 30 minutes. Serve with Royal blend cooked in chicken stock.
