Macaroni Stroganoff

Ingredients

7 oz. elbow macaroni cooked as directed and drained

1 lb. lean ground beef

1/2 cup onion finely chopped

1 tsp. salt

1/4 tsp. pepper

1 Tbsp. vegetable oil

10 3/4 oz condensed cream of mushroom soup

10 oz frozen peas thawed, or 1 can green peas, 17 oz, drained

8 oz sour cream at room temperature

2 Tbsp. dry or cocktail sherry optional


Directions

Preheat oven to 350. in medium bowl, mix onion, meat, salt and pepper; mix well. Shape into 18 meatballs. In large skillet, brown meatballs in oil; pour off fat. In large bowl, mix cooked macaroni, meatballs, soup, peas, sour cream and sherry. Turn into greased 2 1/2 quart baking dish. Bake covered 35 to 40 minutes or til hot. Refrigerate leftovers.
