Magnolia Macaroni Salad

Ingredients

8 ounces macaroni

1 1/2 cups mayonnaise

1 Tablespoon apple cider vinegar or champagne vinegar

1 Tablespoon Dijon mustard

1 teaspoon sugar

1 teaspoon kosher salt

1/2 teaspoon ground white pepper

2 stalks celery diced small

1 cup red bell pepper diced

1/4 cup red onion diced

1/4 cup fresh parsley chopped


Directions

Cook macaroni, drain and let cool 15 minutes. Whisk together the mayonnaise, vinegar, mustard, sugar, salt and white pepper until well combined. Add the cooled macaroni, celery, bell pepper, red onion and parsley. Toss to coat evenly. Refrigerate at least 15 minutes. Serve chilled or at room temperature.
