Mango Coconut Bread

Ingredients

1/4 ts Salt

3 large mangoes ripe, peeled, pureed

1 ts Vanilla

1/4 c Walnuts chopped

1/4 c Raisins

2 Eggs

1 1/4 c All-purpose flour

1 1/4 ts Baking soda

1 1/4 ts Cinnamon

1/4 c coconut meat, shredded

1 c Sugar

2/3 c Vegetable oil


Directions

In medium bowl, cream sugar, eggs and oil until thick. Sift together dry ingredients and add to creamed mixture, blending well. Stir in mango puree, vanilla, riasins, coconut and nuts. Pour into a prepared (oiled and floured) loaf pan 9x5-inch. BAKE 350F / 180C for 45 to 50 minutes. Makes 1 loaf. Cook on rack. Substitute 1 egg white and 1 whole egg. Easy and delicious. I replaced half of oil with applesauce.

Good taste and texture; I also added about 1/3 cup of diced mango as well as 2 TBSP chopped candied ginger. I think I'll try some brown sugar in place of some of the white sugar next time.
