Ingredients

1 Onion

6 Rashers lean bacon or Pancetta

500 g Ripe Tomatoes

1 Red Chili

1 1/2 tbsp Oil


Directions

Peel onion, chop finely. Remove the rind from bacon, cut the bacon into thin strips across. Peel and seed tomatoes, chop roughly. Seed chili, chop finely. Heat in oil pan, add onion and bacon. Stir over medium heat 5 minutes, until onion is transparent, drain off surplus fat. Add tomato and chili, mix well. Simmer sauce gently, uncovered 5 minutes, stirring occasionally. Serve with grated pecorino or parmesan cheese.
