Ingredients

1 pound extra-lean ground beef

1/2 cup uncooked quick-cooking oatmeal

1/2 medium zucchini shredded

1/4 cup Spaghetti Sauce (lowest sodium available)

plus 1/2 cup ^^^ (divided use)

2 large egg whites

1/4 teaspoon Salt

1 teaspoon canola or corn oil

2 tablespoons Water

1 tablespoon Parmesan cheese shredded or grated

plus 1 teaspoon ^^^ ^^^


Directions

In a medium bowl, stir together the beef, oatmeal, zucchini, 1/4 cup spaghetti sauce, egg whites, and salt. Shape into 4 patties about 1/2 inch thick and about 4 inches in diameter. In a large nonstick skillet, heat the oil over medium heat, swirling to coat the bottom. Cook the patties, covered, for 5 minutes. Turn over. Reduce the heat to medium low. Add the water, lifting the patties slightly to allow the water to cover the bottom of the pan. Spoon the remaining 1/2 cup spaghetti sauce onto the patties. Cook, covered, for 10 minutes, or until the patties are no longer pink in the center. Serve sprinkled with the Parmesan.
