Mediterranean Quinoa Salad

Ingredients

1 Cup Dry quinoa

1 Tomato Chopped

1 Red pepper Diced

1 English cucumber Diced

1/3 Cup Red onion Diced

1/3 Cup Kalamata olives Halved

1/4 Cup Parsley Minced

1/4 Cup Basil Minced

2 1/2 tablespoon Lemon juice

3 Tablespoon Olive oil

Salt & pepper


Directions

Once quinoa has cooled, combine with veggies, olives, and herbs. Whisk together lemon juice and oil. Pour dressing over veggies, add salt and pepper, and mix thoroughly.
