Mediterranean Veggie Wraps

Great for a hot day, these wraps are cool, tasty and super healthy.

Ingredients

3 cups plain yogurt

3 tbsp chives chopped

3 tbsp cilantro chopped

3 tbsp mint leaves chopped

2 tsp. course salt

1 tsp. ground pepper

1 tsp. yellow curry powder

1 medium red onion

2 cucumbers

2 cups carrots shredded

0.5 cup black olives sliced

1 can sweet peas

10 Sun-dried tomato flavored tortillas

cooked crab meat or grilled lamb piece (optional)


Directions

Mix all sauce ingredients in a small bowl and set aside. Cut onion and cucumbers into small, 1-inch strips. Mix with shredded carrots, peas, and olives. Spread sauce all over tortillas, to within 1 inch of edges. Put in crab or lamb for the meat-eaters, leave it out for the vegetarians. Lay veggie filling down the middle, and wrap. Makes about 10 wraps.

These were light and delicious-I'll make them again! The blend of all those fresh herbs in the yogurt really made these wraps special. [I also substituted fresh pea pods for the canned since they were in season.]
