Memaw’s Country Beef Vegetable Soup

Ingredients

1 lb stew beef or cubed roast/sirloin

1 carton beef broth

1 vidalia onion chunked

1 shallot minced

1 carrot sliced

1 celery stalk sliced

1 tsp minced garlic

1 can diced tomatoes

6 yellow butter potatoes cut into bite sized pieces

2 tbsp worcheshire sauce

2 bay leaf

1 tsp ground sage

1 tsp thyme

1 1/2 tsp paprika

1 1/2 tsp garlic powder

1 1/2 tsp onion powder

1 tsp dried rosemary

Salt and pepper to taste

1 bag vegetable soup or mixed veggie mix OR

1/4 bag frozen butterbeans

1/4 bag frozen green beans

1/4 bag frozen corn

1 tsp kitchen bouquet (optional) OR

1/4 cup red wine to deglaze (optional)


Directions

Sweat onions, shallots, carrots and celery in pot. Brown meat and deglaze with wine (optional). Add liquid, garlic, seasoning and tomatoes. Bring to a boil and simmer for at least an hour. Then add potatoes and frozen vegetables. Add extra water if desired. Return to boil and simmer until potatoes are fork tender (about 30 minutes). Or you could just dump it all together in the crockpot for 6 hours on high or 8 hours on low.
