2 lb Tripe cut in 1" squares
2 ts Salt
1 ts Cumin
1/2 ts Black pepper
14 1/2 oz Hominy canned
1 lb Pork knuckles Raw
4 c Garlic crushed
4 tb Chili powder
1 tb Oregano
2 tb Butter
Tortillas for serving
Chopped onion for topping
Lemon juice for topping
Taste very good. Tool the advice of the other post and didn't use butter or all the pans. Still very good.
Scooby6070Liked the receipe becuase it had pork knuckles and the seasonings I was looking for. Would not use the butter next time. Also did not use all the pans, etc. Just boiled the tripe alone for about 10 minutes, dumped water. Then boiled tripe and knuckles together for a while and then added seasonings and cooked till tripe was tender. Much simpler......Portwine
