Mexican Soup

Ingredients

1 pound ground turkey or very lean ground beef (cooked)

1 lg packet dried ranch dressing mix

1 packet chili seasoning mix

2 12-oz can corn drained

1 large Onion diced

1 small can green chili's diced

2 12-oz can tomatoes diced

1 can black beans drained

4 cubes beef bouillon

1/2 cup Boiling water

salt and pepper to taste


Directions

Saute onions briefly in 2 T. canola oil, just until soft...do not let them burn. Add ground turkey(beef) to onions and saute until just browned. Drain. Dissolve bouillon cubes in boiling water. Add all ingredients in a large pot. Add enough water to cover all ingredients by one inch. Season to taste with salt and pepper. Simmer for 1/2 hour to blend flavors. Enjoy! Tips: You can add other beans....kidney beans are good, lima beans....whatever you like. Also I've added quartered zucchini...that is most yummy! Experiment with it. 1.5 to 2 points per big bowl. Per Serving (excluding unknown items): 78 Calories; trace Fat (5.2% calories from fat); 5g Protein; 14g Carbohydrate; 3g Dietary Fiber; trace Cholesterol; 247mg Sodium. Exchanges: 1 Grain(Starch); 1/2 Lean Meat; 1/2 Vegetable; 0 Fat.

I added one can of refried beans, and one 32 oz. Box of low sodium chicken broth, and 2 cans of chicken breasts. ( IF USING CHICKEN OMIT THE BEEF BROTH). I added chopped garlic too. And some tumuric for richness. Yummy.

This soup was so great. My husband really liked it. I added a couple of things like leftover grilled chicken and some cumin. This recipe is really simple and very easy to make.

The flavor has enough kick to make my hubby happy, yet calm enough for my girls and I to enjoy it too! And it's healthy! Very easy to put together! Great as left-over for the weekend too!
