Mile-High Buttermilk Pancakes

Ingredients

2 Eggs

1 1/2 cup Buttermilk

1 tablespoon Butter melted

1 cup All purpose flour

1 1/2 teaspoon Sugar

1 teaspoon Baking Powder

1/2 teaspoon Baking soda

dash Salt

Maple Syrup optional


Directions

1. In a medium bowl. Combine the eggs, buttermilk and butter. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Make a well in the center of the dry ingredients. Add the buttermilk mixture to the dry mixture and stir till just combined (don't over beat). 2. Pour about 1/4 cup batter for each pancake onto a hot, lightly greased griddle. Cook over medium heat for about 2 minutes per side or till golden brown, turning to the second side when pancakes have bubbly surfaces and edges are slightly dry. Serve warm with additional butter and syrup if you like Makes 10 to 12 pancakes.

Kids all loved it. Only question I have is how much salt to use? I went with 1/2tsp and seemed fine. Either way this has now become a staple for breakfast in our house!!!

I have 5 children and use this pancake mix weekly. My youngest son could get them every day! Much better than any store bought mix. Light and fluffy with great flavor. If they aren't fluffy you need new baking powder.
