Mini Canadian Egg Bakes

Preheat Oven to 400 Spray Non Stick onto 12 hole muffin pan (Only spray holes needed) I used Butter flavor spray Into each muffin space: Place 3 canadian bacon pieces triangular in bottom Sprinkle a pinch of shredded cheese Drop a pinch of chopped onion Break an egg into each space (I leave the yolk whole) Salt and Pepper to taste for each Top each with another pinch of shredded cheese Bake 13 to 15 minutes at 400' Once removed from oven, use a butter knife to loosen edges of each egg to help from any sticking you may have Use a spoon to scope them out and possibly another to steady to your plate
