PREHEAT OVEN TO 350 -- LIGHTLY GREASE MINI CHEESECAKE PAN
In a medium bowl, mix the crumbs, brown sugar, and salt to combine. Pour the butter over and stir with a fork to moisten. Place about a tablespoon in each cup and pack down.
In a large bowl, cream together the cream cheese, sour cream and sugar until smooth. Beat in the egg and vanilla.
Place 1 tablespoon of chocolate chips in each cup. Evenly divide batter between the cups, covering the layer of chocolate chips. Place another tablespoon of chocolate chips on top of the batter.
Bake 15-18 minutes, or until cheesecakes are set. Allow to cool for 10 minutes in the pan, then carefully transfer them to a cooling rack to cool completely before refrigerating.
