3 - 4 tablespoons extra virgin olive oil

1 garlic clove minced

2 teaspoons freshly chopped parsley (or dried is fine too)

1/2 teaspoon kosher salt

2 avocados, peeled and cut into small chunks

1 cup mache greens (you can use any type of greens spinach, kale etc.)

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground pepper

3 tablespoons hummus homemade or storebought

1 tablespoon plain yogurt

Diced red onion sliced almonds, pea shoots for garnish - optional
