Mini Quiches

Ingredients

3 oz. cream cheese

1/4 lb. butter

1 cup flour

6 slices bacon

1 yellow onion chopped fine

1/2 cup cheese (such as Swiss, cheddar and parmesan) grated

1 large egg

1/2 cup milk

1/4 tsp. salt

1 dash black pepper


Directions

DOUGH: * Mix dough ingredients into a dough ball. Chill 1 hour or overnight. * Roll dough into small balls, and press into mini quiche pan. FILLING: * Fry and crumble bacon. Saute the onion in bacon fat. * Loosely fill each quiche with cheese, bacon and onion. * Combine remaining ingredients. * Pour about 1 1/2 tsp. of the egg mixture into the filled quiches. * Bake at 350 degrees for 30 minutes. Note: To freeze quiche, bake as directed, but reduce time to 20-25 minutes. Reheat in a 350 degree oven until warm.

Loved this, and so did my guests. Easy. Read it first, you have to prep at least an hour in advance, or the night before (which I did). Threw the ingredients of the dough cold into my KitchenAid with the paddle attachment and it only took minutes. Bacon (I used low sodium) can be cooked in the oven to avoid splatters, 400 degrees for +/- 15 minutes. I rotate it half way through. Get it crispy enough to chop up easily. The rest I did as per instructed and it came out *amazing*. Great crust, would use for other things.

I love the crust on this!! A little too much onion for my taste, but it is a very easy recipe that everyone loves!
