Red beans

Fresh cut corn kernels

Salt

Water

Butter

Directions

This is another gift from the Indians, a gift we now call succotash. In the early days, however, red beans were used rather than lima beans. Soak and cook the beans first, drain them, and place them in a casserole with fresh-cut corn kernels (or frozen), a bit of butter, salt, and pepper, and a very small amount of water. Cover and simmer on the top of the stove for a few minutes, until the corn is tender. In the old days this dish was made with bear grease rather than butter.
