Mom's Nippy Tuna Casserole

Ingredients

1/4 cup green pepper chopped

3 Tbsp. butter

2 Tbsp. flour

1 cup milk

1 Tbsp. onion grated

2 tsp. mustard

1 tsp. horseradish

1 tsp. lemon juice

1/4 tsp. salt

1/4 tsp. pepper

1 can (17 oz.) corn drained

2 Eggs hard-boiled, sliced

1 can (7 oz.) tuna

1 cup cheddar cheese grated, divided

1/2 lb. pasta cooked


Directions

Saute pepper in melted butter. Add flour. Cook 1 minute. Gradually stir in milk. Cook until thickened. Stir in onion, mustard, horseradish, lemon juice, salt & pepper. Add rest of ingredients, using 1/2 cup of the cheese. Place in 2-3 qt. casserole dish. Bake 25 minutes at 350. Sprinkle with remaining cheese and serve. Can be made ahead of time and refrigerated overnight; be sure to increase cooking time to 1 hour.
