Ingredients

200 gram Lamb Shoulder Cubed

2 tablespoon Olive oil

1 Onion Chopped

2 cloves Garlic Chopped

1/2 teaspoon Paprika

1/2 teaspoon Cinnamon Ground

1/2 teaspoon turmeric

1/2 teaspoon Ground Allspice

1/2 teaspoon Ground Coriander

1/2 teaspoon Ground Nutmeg

1 teaspoon Cardamon

Pinch Black pepper

550 ml Beef stock

Handful Raisins

Handful Dried Apricots

2 Carrot Sliced

200 grams Canned Chopped Tomatoes

1 tablespoon Fresh Coriander Chopped

1 tablespoon Fresh parsley chopped

150 grams Couscous


Directions

Heat oil in pan, add half the meat and brown then transfer to a plate. Brown the rest of the meat in the same way and remove from the pan Heat another bit of oil and fry onion 5 mins Return meat to pan with garlic, tomatoes, stock, spices, raisins, apricots and black pepper Bring to boil then simmer for 2 hours till meat is tender Add carrots 15 mins before end of time, and parsley and coriander before serving. Cook couscous as normal and serve with stew
