Mum's Sticky Date Pudding

Ingredients

1 cup pitted dates

1 tsp bicarb soda

90 g softened butter

1/2 cup firmly packed brown sugar

1 tsp vanilla essence

2 eggs, lightly beaten

1 1/2 cups self raising flour

Sauce:

1 cup brown sugar firmly packed

1 cup cream

90 g butter

1 tsp vanilla essence


Directions

1. Heat oven 180°C 2. Put dates + bicarb + 1 cup boiling water in heatproof bowl, leave 15mins 3. Beat butter + sugar + vanilla 4. Gradually add beaten eggs 5. Fold in 1/2 sifted flour; then 1/2 date mixture and stir 6. Add remaining flour and date mixture, mix well and combine 7. Bake for 40min Sauce: Add brown sugar, cream, butter and vanilla essence. Bring to boil, then simmer for 5mins
