Mushroom Shallot Demi Glace

Ingredients

10 Each thinly sliced

1 tbsp

3 tbsp chopped

6 quarts

5 sprigs

1 each

1 case sliced

1 quart


Directions

Saute shallots and garlic until translucent, deglaze with burgundy and add thyme. Cook wine for 2 minutes. add Beef stock, veal stock, salt and pepper and reduce by 1/4. Slice mushrooms and place into a hotel pan. After sauce has reduced thicken with corn starch and pour over mushrooms.
