Nelson Christmas Breakfast Dish

One of the best things about this dish is you can cook the sausage/veggies (if doing a veggie version) the night before then put it together in the morning.

Ingredients

1 pkg Ore Ida hash browns thawed and patted dry

1/3 cup Butter

1 lb Bulk sausage (hot or mild) cooked and drained

16 oz Monterey jack or pepper jack cheese grated

1 bell pepper chopped, uncooked

1 pkg baby bella mushrooms sliced

1 large onion diced

PAM type butter spray (optional)

6 large eggs

1 dash salt

1 dash pepper

1 cup milk or light cream


Directions

Mix hash browns with 1/3 cup of butter and some salt and pepper. Spray PAM into 9" x 13" pan Press potato mixture into the dish Bake at 425F for 20-25 min Let it cool or refrigerate overnight In a non-stick skillet with nothing or a little PAM (if sautéed in butter, there will be too much liquid in the dish), sauté the onion, mushrooms and bell peppers until just cooked. Pat veggies dry. Sprinkle sausage, veggies and cheese over potatoes Beat eggs, milk, salt/pepper in bowl Pour egg mixture over sausage/cheese/bell pepper Bake at 450F for 18-25 minutes
