Nik’s Meatloaf

Ingredients

1.5 pounds Ground chuck Or 2 lbs of pork/ beef mix

1/2 cup Bread crumbs

1/2 cup Oats

1 cup Shredded cheese

1/2 cup Evaporated milk

1/4 teaspoon Pepper

1/8 teaspoon Celery salt

1/8 teaspoon Dry mustard

1/2 cup Bell pepper Diced

1/2 Onion

1 clove Garlic

2 tablespoons Brown sugar

1 Egg

1/2 teaspoon Salt

Fresh parsley chopped Or dried

1 tablespoon Worcestershire sauce

Glaze

1/4 cup Ketchup

1 tablespoon Cider Vinegar

1 tablespoon Honey

1 tablespoon Brown sugar

1/4 cup BBQ Sauce

1/4 teaspoon Worcestershire sauce

1 dash Hot sauce Optional


Directions

Heat oven 350. Melt butter in a skillet. Add peppers and onions. Cook till onions are translucent. Set aside to cool off. In a small bowl, mix the glaze ingredients: ketchup, cider vinegar, honey, brown sugar, bbq sauce, Worcester, and hot sauce. Set aside. In a large bowl, mix all the meatloaf ingredients: meat, breadcrumbs, oats, egg, cheese, evaporated milk, seasonings, garlic, brown sugar, sautéed vegetables and 1/2 of glaze mix. Keep remaining glaze for top of meatloaf. Form loaf in a 9x13 casserole dish. Cook in oven for 55-75 minutes. Use a thermometer to check temp. 15 minutes before done, brush loaf with remaining glaze. Place back in the oven till cooked to likeness.
