Oatmeal Blueberry Muffins

Ingredients

1/4 ts Ground cloves

1/4 ts Nutmeg

1/2 ts Allspice

1/2 c Brown Sugar (packed)

1/2 ts Salt

1 c Unbleached flour

1 ts Baking Powder

1 1/2 c Blueberries

1 c Buttermilk or sour milk

1 c Rolled oats

1 ts Cinnamon

1/3 c Salad oil

1 Egg

1/2 ts Baking soda


Directions

Soak oats in milk until moisture is absorbed. Add salad oil, egg, brown sugar and blueberries and mix thoroughly. Mix together flour, soda, cinnamon, cloves, baking powder, salt, allspice and nurmeg and add to oat mixture. Mix thoroughly. Fill greased muffin cups 2/3 full. Bake in a 400 degree oven for 20 to 25 minutes until golden brown. Serve hot. From the Kitche of: Gary & Margie Hartford, Eugene, OR (1:152/19)
