Oatmeal Cake

Ingredients

1 cup Quick cooking Oats

1 1/4 cups boiling water

1/2 cup shortening

1 cup brown sugar

1 cup Granulated Sugar

2 Eggs

1 1/3 cups Flour

1 tsp soda

1/2 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp vanilla

1/2 tsp salt

1 stick melted butter

1 cup brown sugar

1 cup nuts

1 cup coconut

2 egg yolks

Milk


Directions

Pour 1 1/4 cups boiling water over the oats. Cream shortening and sugar and add the eggs one at a time. Add Oatmeal and then the flour. Add dry ingredients. Add vanilla and mix. Pour into greased pan and bake at 35 minutes at 350 degrees. Topping: Mix all ingredients together. Add enough milk to make the topping spreadable. Spread on baked cake and brown under the broiler.
