Oatmeal muffins (gluten free)

Ingredients

1 C rolled oats

1 C buttermilk

1/3 C butter

1/2 C brown sugar

1 egg

1 C gf flour

1/2 t baking soda

1 t Baking powder

1 t salt


Directions

Soak oats in buttermilk for 1 hour. Preheat oven to 400. Blend butter, sugar and egg. Sift together flour, baking powder, soda and salt. Combine flour mixture alternatively with oats into butter and sugar mixture. Bake in muffin tin, 2/3 full, 20-25 min. Serve hot.
