Oatmeal Muffins

Ingredients

3 ts Baking Powder

1/4 c Granulated sugar

1 Egg slightly beaten

1 c milk

1 c Quick-cooking oatmeal

3 tb Vegetable oil

1/2 ts Salt

1 c Flour


Directions

Preheat oven to 425 degrees Fahrenheit. Grease 12 muffin tins with shortening. Sift together flour, sugar, baking powder, and salt. Add oatmeal, stir to mix. Mix in egg, milk, and oil, stirring only to moisten. Fill 12 muffin tins and bake for 15 minutes or until lightly golden brown on top. REC.FOOD.RECIPES From rec.food.cooking archives. They look beautiful, but I would recommend doubling the sugar and adding cinnamon as they are quite plain.

Moist! My children loved them! What's good about this recipe is that you could add stuff to it. I added cinnamon to it. Next time, I will probably add more sugar to it.
