Old fashioned minestrone

Ingredients

3 tablespoons Vegetable oil

1 large Onion Finely chopped

2 cloves Garlic minced

2 Carrot Diced

1 1/2 teaspoons Dried Italian herb blend

1/4 cup Pearl barley Rinsed and drained

2 medium White potatoes Peeled cut into bite size pieces

1 large Turnip Peeled and diced

8 cups vegetable broth

1/4 cup Tomato paste

1 (15 oz) can Red kidney beans

2/3 cup Orzo pasta

1/2 teaspoon Salt

1/2 teaspoon Black pepper

1 1/2 cups Shredded cheese cheddar


Directions

In a pressure cooker heat oil over medium high heat. Add onion, garlic, celery, carrots and herbs; cook stirring frequently until onions softened. Add barley, potatoes, vegetable stock and tomato paste. Close and lock lid. When cooker reaches high pressure cook for 10 minutes. When done open using quick release method. Add kidney beans and pasta; cook uncovered for 10-12 minutes. Season with salt and pepper. Serve hot with shredded cheddar cheese on the side.
