Outrageous Chocolate Chip Cookies

Ingredients

1 cup Butter

1 cup Sugar

2/3 cup brown sugar packed

1 cup Peanut butter

1 teaspoon Vanilla

2 Eggs

2 cups Flour

1 cup quick oatmeal

2 teaspoons Baking soda

1/2 teaspoon Salt

12 ounces semi-sweet chocolate chips


Directions

Heat oven to 350F. Beat butter, sugars, peanut butter, vanilla & eggs vigorously in large bowl until creamy and well blended. Stir in flour, oats, baking soda & salt. Stir in chocolate chips. Drop dough by rounded tablespoonfuls about 2" apart onto ungreased cookie sheet. Bake 12 min. or until golden brown. Cool 1 minute; remove from cookie sheet to brown paper. Makes about 4 dozen cookies.

The cookies tasted great, but were extremely dry. I double-checked the amounts and I didn't do anything different than the recipe. They didn't crumble but they had a sandy texture, like the brown sugar didn't mix in well or something. I made sure to stir everything together so I think I may add an extra egg or some water or something next time. The taste was just great, they were just too dry. I also had to bake them longer than the 12 minutes, as many others have mentioned. Each batch varied from 14 to 16 minutes.

Delicious. Mine had to cook a lot longer. 13 minutes straight through (indiana summer). Also added peanut butter m&ms I had laying around since Halloween. They really complimented the peanut butter. Amazing, moist cookies.
