Patt's roasted corn summer salad

Corn grilled with bell pepper, red onion, cilantro

Ingredients

2 ears fresh corn, shucked

1/4 medium red bell pepper, diced

1/4 small red onion, diced soak in cold water 10 minutes first

1 small Jalapenos, diced small

2 tbsp EVOO

1 tsp lemon juice

1/4 cup Fresh Cilantro or 2 tbsp dried


Directions

Heat grill pan on stove or on grill. Add 1 tbsp olive oil to pan. When hot, add the shucked corn on cob and cook for 10 minutes until parts are brown and grilled. Mix together rest of ingredients. When corn cooled enough to handle, remove corn from the cob. Add corn kernels to rest of ingredients. Add s&p to taste. Chill at least 30 minutes before serving.
