Corn grilled with bell pepper, red onion, cilantro
Heat grill pan on stove or on grill. Add 1 tbsp olive oil to pan. When hot, add the shucked corn on cob and cook for 10 minutes until parts are brown and grilled.
Mix together rest of ingredients. When corn cooled enough to handle, remove corn from the cob. Add corn kernels to rest of ingredients. Add s&p to taste. Chill at least 30 minutes before serving.
