Peach Buttercream Cupcakes

Ingredients

2-2 1/2 cups Flour

1 teaspoon Baking powder

1 teaspoon Baking soda

3/4 cup Sugar

1 cup Peach puree

1/2 cup Vegetable oil

2 teaspoon Vanilla

2/3 cup Water

2 tablespoons Vinegar

3/4 cup Butter room temperature

1 1/2 cups Confectioners Sugar

1/4 cup Peach puree

Vanilla to taste

Directions

Preheat oven to 375. Line a muffin tin. Sift together flour, baking powder, baking soda, and sugar. Mix together peach puree, oil, and vanilla. Add to dry ingredients and whisk. Add vinegar and stir quickly. Pour into muffin cups and bake for 20 minutes. Cool and frost For the buttercream: Whip butter until fluffy, add sugar, puree and vanilla, and beat until combined.
