PIneapple-Almond Cheese Spread

Ingredients

2 cans, 8 ounces each crushed pineapple

1 package, 8 ounces cream cheese softened

4 cups, 16 ounces sharp Cheddar cheese shredded

1/2 cup mayonaise

1 tablespoon soy sauce

1 cup natural almonds chopped and toasted

1/2 cup green bell pepper finely chopped

1/4 cup green onions or chives minced

celery stalks or assorted breads


Directions

Drain pineapple. In large bowl, beat cream cheese until smooth; beat in Cheddar cheese, mayonaise and soy sauce until smooth. Stir in pineapple, almonds, green pepper and onions. Refrigerate, covered. Use to stuff celery stalks or serve as spread with assorted breads. Serve at room temperature. Makes 4 cups
