DOUGH Dissolve yeast in lukewarm water. Place flour on board and make a well. Add ingredients to flour and mix well with fingers. Knead thoroughly to form a smooth ball of dough. Rub dough with oil, place in a bowl and cover. Set in a warm place until dough has doubled in bulk. Roll out dough to fit a baking sheet. SAUCE Brown garlic and oil, remove garlic. Add plum tomatoes and simmer 25-30 minutes. PREPARE PIZZA Cover dough with 2 c of tomato sauce and your choice of topping as follows: TOPPING: CHEESE Sprinkle 1 c grated Parmesan cheese, 4 oz mozzarella and 1 t oregano over top. Drizzle with olive oil. TOPPING: SAUSAGE Spread 1/2 lb cooked and crumbled sausage, 1/2 c of grated Parmesan cheese, 4 oz mozzarella and 1 t oregano over top. Drizzle with olive oil. TOPPING: ANCHOVY Cut 10 anchovies into small pieces. Place on prepared dough. Sprinkle with 1/2 c of grated Parmesan cheese, 4 oz mozzarella, 1 t oregano, and 1/2 c pitted sliced black olives.
