Poached Eggs & Kale

Ingredients

8 eggs

Large bunch kale

1 clove garlic

1/2 cup Queso Fresco

Olive oil

Salt

Pepper

Chili powder


Directions

Poach eggs Same time, sauté garlic in olive oil over medium heat. Add chopped kale and turn heat low to wilt. Season with sat, pepper, olive oil. Divide between four plates. Sprinkle with queso. Top with two poached eggs. Serve with biscuits or tortillas.
