Pork and Veggies Skewers with Ranch BBQ Sauce

Ingredients

1 18 oz. bottle honey BBQ sauce

1 packet dry ranch dressing mix

1 tbsp brown sugar

1 tbsp mustard

2 pounds boneless pork loin cut into 1 in. cubes

1 tbsp olive oil

salt and pepper to taste

3 bell peppers (any color) cut into 1 in. cubes

3 small red onions cut into wedges


Directions

To make BBQ sauce, combine first 4 ingredients in a small saucepan over medium heat. Simmer, stirring occasionally, 20 minutes. Remove from heat. Heat grill to medium-high heat. Thread pork and veggies onto skewers (soak wood skewers in water for 30-40 minutes beforehand). Brush with oil, and sprinkle with salt and pepper to taste. Grill skewers over direct heat 12-14 minutes, turning to brown evenly. Brush with ranch BBQ sauce druing last 3-4 minutes of cooking. Serve with additional sauce for dipping.
