Pork Carnitas

Ingredients

1 3-4 lbs. Pork Shoulder cut into large pieces

6 cups Chicken Broth

1/2 cup Coca Cola

1 medium white onion chopped

1/4 cup Vegetable oil

3 tbsp Kosher Salt (or to taste)

3 tbsp Lime Juice

1 clove Garlic crushed

1 tbsp Chili powder

1/2 tsp Dried oregano

1/2 tsp Ground cumin

2 Avocados Sliced

1 bunch Fresh Cilantro chopped

1 cup Pico De Gallo

8-10 Corn Tortillas

Goat Cheese crumbled


Directions

Preheat an oven to 400 degrees F (200 degrees C). Heat the vegetable oil in a large Dutch oven over high heat. Season the pork shoulder with salt, then arrange the pork in the Dutch oven. Cook until browned on all sides, about 10 minutes. Add the onion, garlic, lime juice, chili powder, oregano, and cumin. Pour in the chicken broth and coke, then bring to a boil. Reduce heat to medium-low, cover, and continue to simmer until pork is very tender, about 2 1/2 hours. Transfer the pork shoulder to a large baking sheet, reserving the cooking liquid. Drizzle with a small amount of the reserved cooking liquid and lightly season with salt. Bake the pork in the preheated oven until browned, about 30 minutes. Drizzle more of the cooking liquid on the meat every 10 minutes, and use two forks to shred the meat as it browns. Heat tortillas on a griddle, this is to make this strong enough to hold the food! Add carnitas, pico, cilantro, avocado, then a little goat cheese to the tortilla and ENJOY!!

My whole family loved this! The only thing I would do differently is to add less salt. I had to use bouillon in place of 4 cups of chicken broth. I think the bouillon added too much. So use broth, or cut back drastically on the salt. There was so much salt, I felt like I was missing out on all the other flavors a little. I served with mozzarella cheese, cilantro and onion. Delicious!

This Carnitas recipe is a keeper. I followed the recipe exactly, it was so moist and tender. The best part is how it became caramelized during the last half hour. Definitely will make again!

I loved the recipe, but was the coke to drink, I didn't see it in the recipe at all.

Delicious!! I lightly salted the pork roast with regular table salt but otherwise left recipe the same. My daughter raved about them all through dinner. Served with homemade spanish rice and homemade corn tortillas. Yummy!!!

Holy salt. This recipe would be just fine with no salt added. Otherwise it has tasty ingredients.
