Pork Chile (Verde) - Cooking Light

1 lb

1 large seeded and sliced into rings

to coat pork loin

2 tablespoon olive or canola

24 oz

Chopped


Directions

1. Evenly coat pork loin with salt on all sides 2. Place salted pork and seeded jalapeno rings into crock pot 3. Cook on HIGH for 4 hours or until pork loin is tender and easy to pull apart 4. Remove cooked pork loin from crock pot and shred using 2 forks (uniform pieces is not important) 5. Place 2 tablespoons oil in a pan and brown meat on high heat. About 3 minutes. 6. Pour verde salsa over pork and let simmer 10 minutes until the salsa and meat are heated together. 7. Serve with rice and a side of black or pinto beans. 8. Sprinkler with fresh chopped cilantro if desired.
