Pork Chop Casserole

Directions

In a large saucepan, melt 1/2 of the butter, add seasoned pork and cook until brown and tender. Stirring often. Remove from pan. Add remaining butter, and saute veggies until tender. Add Cream of mushroom soup and water to veggies, stirring until hot. Add pork and rice to mixture, and season to taste. OK, we cheated. I used olive oil instead of butter, I diced up the boneless pork chops after cooking. I greased the casserole dish with butter then used 'snippets' which is bread cut up into cubes instead of rice. We added some fresh mushrooms to the mix & used 1/3 cup of pure cream instead of water. The last substitution was cajun seasoning on the pork while it was getting browned & some more cajun seasoning on the veges & mushroom soup mix. Great recipe, great 'bones' to go different directions with....
