Potato Cheese Soup

Ingredients

2 quarts chicken broth

3-4 large potatoes Unpeeled, & chopped

1 large onion peeled and chopped

3 carrots peeled and chopped

3 stalks celery sliced

2 cups shredded cheese

2 cups whole milk


Directions

Add vegetables to chicken broth, bring to boil, simmer 30-45 minutes. Blend to smooth consistency with immersion blender or regular blender. Add the cheese and milk, return to boiling, heat gently until cheese melts. Serve with chopped parsley or chives if desired.
