Ingredients

5 pounds Red or yukon gold potatoes

1/2 Red onion chopped fine

4 Eggs; hard-boiled

1/2 cup reg mayo

1/2 cup Miracle mix

1/4 cup pickle juice

2 stalks celery chopped fine

1 teaspoon Kosher Salt

1/2 teaspoon pepper

1 tablespoon Fresh parsley

1/2 teaspoon Paprika and parsley for garnish


Directions

Cook potatoes al dente and let cool. Then slice, add all other ingredients, and chill over night.
