Ingredients

500-800 g stewing meat patted dry and seasoned with salt and pepper

1 onion, roughly choppes

2 cloves garlic minced

2 large potatoes peeled and cubed

4-5 Baby marrows chopped

4-5 Baby corn cut in thirds

2 large carrots peeled and roughly chopped

1 cup beef stock

1 inch citrus peel (optional)

1 1/2 teaspoon each All spice cloves and corriander

1 bayleaf

Chili flakes to taste

Salt and pepper to taste


Directions

Heat oil in a pot until smoking. Brown the meat in the pot. Remove the meat and cook onoins until soft. Add garlic for the last minute, continuously stirring. Remove onoins and layer the meat at the bottom with the veggies on top. Add beef stock and the remaining aromatics. Season with salt and pepper to taste and add the onoins. Bring the pot to a simmer and cook with the lid on until the potatoes are cooked through, about 20 to 30 minutes. Remove lid, mix everything together and simmer until the ideal viscosity is reached.
