Prune Bundt Cake

Ingredients

1 cup dried prunes approx 20

1/2 cup dark rum sub brandy or water

1 cup buttermilk

1 teaspoon Vanilla

3 eggs

1 1/2 cup sugar

1 cup oil

2 cups flour

1 teaspoon cinnamon

1 teaspoon allspice

1 teaspoon nutmeg

1 teaspoon salt

1 teaspoon baking soda

1 cup walnuts chopped, optional


Directions

Macerate prunes in liquid. Cool to room temperature. Preheat oven to 350. Prepare bundt pan. Mash prunes and check for pits. Combine all ingredients (1 min low speed electric mixture). Bake 45-50 min. Cool 10 min and invert from pan. Allow to cool before glazing/frosting.
