These muffins are really nice straight out of the oven ! The pumpkin is healthy for you, and the chocolate just oozes out for those chocolate lovers out there!

1 cup Canned pumpkin
3/4 cup milk
6 tablespoon Unsalted butter melted
2 Eggs
Great muffins! I think the amount of pumpkin and chocolate chips is good, but maybe a bit more cinnamon? I filled my batter to the rim of the liners, still getting 18 muffins though, in hope that they would rise up beautifully, to make big muffin tops. They didn't really rise as much as I'd hoped. Still really good muffins and I'll make again :) :)

adw899Tried these muffins yesterday with some leftover pumpkin I had in my refrigerator. I had a little over 1 cup of pumpkin so I reduced my milk to 1/4 cup. They turned out really moist & delicious & I will most definitely make this recipe again.
